Can it really be September? ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Are there any of you who feel the year is
going too slowly? Allan and I are fastening
our seat belts for fear of a crash, the year is
speeding by so fast.
Thought you would like to see a picture of some of the steers up on those high mountain grasses, just to let you know they are doing their job. They are looking great. We have had an abundance of rain here in the Rockies - a rainshower nearly every day and the most rain in a lot of years. Allan is amazed at how fast the cattle are growing and how healthy they look. So many of our calves will not be finished till next year, but the good news is that next year we should have a much better supply than this year. We are hoping to keep ahead of the demand. That kinda sounds like we are bigger than we are. The truth is we are a very small operation, growing steadily, and trying to manage that growth so that we will still be here five years from now, supplying you with grass-finished beef and lamb. We have crossed many streams, jumped many hurdles, overcome many difficulties, and we just keep on ticking. It is a good thing.

Eat that fat!!! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
I just finished reading the book Real
Food by Nina Planck. How do I describe
how I feel? Exhilarated. Vindicated. Sane, in
an insane world. If you have not read this
book place it next on your list of required
reading. Once again I just could not get
enough of it. Facts, studies, and just plain
common sense are presented, and the final,
earth shattering conclusion is that traditional
foods are healthy, industrial foods are not.
I felt such a sense of relief to know that there is science out there to back up what I know in my gut - that meat, cheese, butter, milk, eggs and fish are all good for you. They do not cause heart disease, they prevent it. They do not make you fat, they keep you slim and healthy. Please click on the link below to read Nina's August, 2007, blog. Whether you have children or not, you need
to see this. I was stunned, and after talking to
my daughter I am a real believer. She said
her children slept right through the alarm
when it went off recently. Fire is a horrible
thing, and tragedy can be difficult to avoid, but
one thing is for sure - smoke alarms might not
wake your children.

SO ... What's on Special? ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
One very important thing I found out about
fats from Real Food - the best fats to
use when frying at high temperatures are beef
fat, lard and butter. That got me to thinking
about the fat that I pour off briskets and short
ribs when I cook them. I have begun saving
the fat and using it when I fry potatoes,
vegetables, and anything else that I deep fry.
While I don't deep fry all that often, if I am
going to do it I want to do it the healthiest way
possible.
So ... we are running Short Ribs and Brisket on sale this month at 25% off the retail price. That makes Brisket $3.74 per pound and Short Ribs $2.62 per pound. We also have quite a bit of Beef Kabob meat on hand, so we are running that on special too at $5.24 per pound. Also, Lamb Leg Shanks will be on sale at $2.99 per pound. If you live in the southwest you are probably stocking up on roasted green chilies. They are delicious stewed with the lamb shanks.

In Closing... ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Life shouldn't be a journey to the grave with
the intention of arriving safely in a pretty and
well-preserved body, but rather, to skid in
broadside, thoroughly used up, totally worn
out, and loudly shouting, "Wow! What a ride!
