Happy New Year! Seems like yesterday we were telling you Merry Christmas! What a wonderful year this has been for GrassRoots Meats. We are so excited about 2006. We are making plans for the future, both long term and short term. One thing we know for sure - there are lots of you looking for clean meats, with a very limited supply of product. In 2006 we will work hard to increase our production to better fill your needs. Of course we will keep you posted during 2006 on all the changes and advances we are making. We are praying for direction in many areas and your prayers for us would be greatly appreciated. |

Meat Additives ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
In addition to all the hormones and antibiotics being
given to animals we now have another area of
concern that many folks are completely
unaware of - meat additives. One
company called Ajinomoto Food manufactures Activa
FP and Activa RM,
enzyme products designed to to "enhance and
improve your meat." You need to be aware that
these products might be added to the meat you buy
in grocery stores and restaurants. GrassRoots Meats
does not need to add flavor or
tenderness enhancers.
Activa FP is a formulation that is "designed for use specifically in meat and poultry restructuring applications. It uses a flavor/enzyme combination for production of value-added, portion-controlled meat products. The active ingredient in this preparation is microbial transglutaminase." Activa RM is "specifically designed to restructure muscle foods such as red meat, poultry and seafood, this form also has application in other food products which have lower protein content. The main components of this preparation are: sodium caseinate, maltodextrin, and transglutaminase." |

The Difference a Century Can Make ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
On a lighter note, some US statistics for 1905, from a
article by Lucy Meyring of the Colorado Cattlemen's
Association. The average life expectancy in the US
was 47 years and only 14% of the homes had a
bathtub. 8% of the homes had a telephone and a 3
minute call from Denver to New York City cost eleven
dollars.
There were 8000 cars in the US, and only 144 miles
of paved roads. The maximum speed limit in most
cities was 10 mph. The tallest structure in the world
was the Eiffel Tower. The average wage in the US
was 22 cents an hour and the average US worker
made between $200 and $400 per year.
More than 95% of all births in the US took place at home and 90% of all physicians had no college education. Instead, they attended medical schools, many of which were condemned in the press and by the government as "substandard." Sugar cost 4 cents a pound. Eggs were 14 cents a dozen and coffee 15 cents per pound. Most women only washed their hair once a month, and used borax or egg yolks for shampoo. The 5 leading causes of death in the US were: 1) Pneumonia and Influenza, 2) Tuberculosis, 3) Diarrhea, 4) Heart Disease, and 5) Strokes.

Looking to the Future ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
When the Constitution was written, 90%
of
Americans made their living off the land. In the early
part of the 20th century 30% of our people were still
living off the land. Today there are fewer than 2%.
There are more people in prison today than there
are in the cattle business.
We are doing our best to remain part of that 2% (and to not join the ranks of prison inmates). We thank you for your support and look forward to the future, especially 2006. God bless you all and may you have a wonderful new year.

Beef Fajita Marinade ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Try this marinade on your flank steaks, hanging
tenderloin, or round steak. Marinate the meat, then
grill over medium heat,
slice thinly, place in tortilla and add any or all of the
following: sauteed onions,
bell peppers, sour cream, guacamole, grated cheese
and pico de gallo.
Marinade: 1 fresh lime, peeled and pureed in blender; 1/4 cup tequila; 1 teaspoon crushed dried oregano; 2 large cloves garlic, minced; 1 tablespoon minced fresh cilantro, 1 teaspoon ground cumin, 1/4 teaspoon black pepper, 1/2 teaspoon salt. Mix well. Pour over 1 to 1 1/2 pounds meat, cover and refrigerate up to 24 hours. Oh so yummy!

easy to pack and ship, so let us know if we can
supplement your beef supply. We also have lots of
lamb rib chops, sirloin chops, leg steaks, and kabob
meat, as well as both small and large racks of lamb.
