Free Ground Beef Free ground beef for April! NOT!!! April Fool's Day! April is a great time of the year. Lots of new calves on the ground, and lots of fresh green grass for them to eat. In the Rockies we are just starting to think about the flowers we hope to plant and hoping that each snowfall is the last. In the lower elevations the flowers are already in bloom and the grass is ready for a first cutting. |

With Passover on April 12th and Easter April 16th we
would like to wish all of you a blessed feast. Our
family celebrates the Christian Passover every year.
Often Passover falls much before or after Easter
because the Jewish calendar is different that the
Roman calendar, but this year it lines up perfectly.
Should you be wanting to celebrate Passover or Easter this year with lamb, we have plenty of bone- in or boneless legs available. UPS can get them to you in two to three days.

Buyer Beware - Organic Standards ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
The Organic Trade Association is seeking to dilute
the organic standards. If changed, xanthan gum (an
artificial thickener), ammonium bicarbonate (a
synthetic leavening agent, and ethylene (a chemical
to ripen tomatoes and other fruit) will be permitted in
products labeled organic, despite a court ruling last
June that said they are not acceptable.
Whatever the outcome, consumers need to seek out products that exceed the organic rules. Most organic cattle are fed grain, but even organic grain is the wrong diet for ruminants. Beef, lamb and dairy products from grass finished animals are more nutritious than grain finished versions, with more vitamin E, omega-3 fats and conjugated linoleic acid, a fat that fights obesity, cancer and heart disease. Fresh green pasture is good for pigs and poultry, too, but it's quite possible the organic bacon or turkey burgers in your refrigerator came from animals that never left the barn.

Writers on the Range ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
I found the above Buyer Beware information in an
article in our local
newspaper, a syndicated column called "Writers on
the Range." While we so appreciate being able to
buy organic products in our local grocery and health
food stores, it is always best to know the actual
producer.
The article was written by Nina Planck, a contributor to Writers on the Range, a service of High Country News in Paonia, Colorado. She is the author of "The Farmers' Market Cookbook" and the soon to be published, "Real Food: What to Eat and Why." She lives in New York City.

Green Chili Beef Burritos ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Thanks to Jeanette Cronk of Edgewood, NM, for this
recipe: Brown 1 pound ground beef. While cooking
mix in some chili powder, garlic (real or powdered),
chopped onion, seasoning salt and chopped green
chilies (fresh, frozen or canned). Once ground beef
is fully cooked add some canned tomatoes and a can
of pinto beans. Simmer together for a few minutes.
Fill tortillas with ground beef mixture, sour cream and cheese. Roll up and garnish with salsa. Thanks, Jeanette! If anyone out there has a recipe using grass finished meats that they would like to share with us, please email it to us. We all enjoy trying out new ways of cooking.
